A visit to the Allegrini Estate

In Ville-di-Parasu, the Allegrini farm operates in tune with the rhythm of its herd of Corsican ewes and the pastoral seasons. The milk is used to make farmhouse cheeses, Brocciu PDO and sweet treats, whilst the lamb takes centre stage at a table where meals are cooked over a wood fire. A farm where livestock rearing, processing and cooking come together to embody the full scope of a craft.

Di leva in purleva – From generation to generation

In Ville-di-Parasu, the Allegrini family looks after a flock of over two hundred Corsican ewes. The production of dairy products here is carried out in accordance with traditional farming practices, resulting in Brocciu PDO as well as a range of traditional specialities:chjarchjoli, migliacci, pastizzu, curconi and flans. Through herd management, cheese-making and hosting guests for meals, the farm keeps the village’s pastoral culture alive in the spirit of passing on traditions.

Meeting

Brocciu, sweet treats and wood-fired cooking

As a sheep farmer, I work as a family with my wife and daughters. We rear Corsican dairy ewes, whose milk we use to produce cheese, brocciu and traditional desserts. We also process the lamb, which we showcase at our unique evening events under the olive trees, where our guests enjoy an average of six different dishes, all cooked over a wood fire.

The story of a return to one’s roots

My father already had a small herd, and from a very young age I felt a deep connection to the land. After trying my hand at other careers, I naturally returned to this passion, which has never left me. Today, as a father, I want to pass on to my children this love of the land and our way of life.

Farmers and parents: the challenge of striking a balance in everyday life

Finding a balance is a real challenge, but we’ve chosento involve our children in the day-to-day running of the farm. They often come along with us, which allows us to spend as much time as possible together, close to nature and the animals.

Opening our doors and sharing our passion: the challenge of diversification

From the moment we set up, we wanted to go beyond simply producing cheese. We have developed a range of products that showcases the full richness of our milk and our livestock, offering unique tasting experiences right here on our farm. It’s a wonderful way to introduce people to our local area and share our craft with as many people as possible.

Our message to the next generation

Above all, we must remain, remain committed to our land and our values. This profession demands passion and perseverance; we must never lose heart. Farming is a constant commitment, but it offers in return an incomparable wealth: that of passing on knowledge, sharing and respect for nature.
