At A Biscutteria Albertini, Thomas Albertini perpetuates a family know-how inspired by recipes handed down from generation to generation. The cookies are made with simple, carefully selected ingredients, in keeping with Corsican traditions. The range is available in sweet and savory versions, with authentic flavors that honor the island's terroir. In the workshop located near the Palasca train station, canistrelli are made by hand, from the preparation of the dough to the baking process. Some recipes incorporate herbs from the Corsican maquis, while others feature original creations based on chocolate, candied lemon or seasonal produce. Between tradition and innovation, the cookie factory invites visitors to discover a gourmet universe where each cookie tells a little of the history and flavours of Corsica.
