Pistorozzi Gourmet Event

It is on the hills above the Reginu Valley, in Ville di Parasu, that Pierre-Louis Pistorozzi carries on the tradition of artisanal charcuterie. From rearing his pigs to processing the meat, he masters every stage with passionate expertise, which he invites you to discover both on his farm and at his table.

Getting there

A behind-the-scenes look at the farm

The tour begins in the shade of olive and oak trees. As you walk through the estate, Pierre-Louis speaks candidly about the realities of his trade: the demands of free-range rearing, feeding the animals, and upholding traditions in the face of modern challenges. As the conversation unfolds, charcuterie takes on a whole new dimension, revealing the history and the craftsmanship that shape its quality.

A delicious tasting session

The experience continues on the terrace of Villa Santa Maria in the village of Ville. The lonzu, coppa and salsiccia then reveal the finesse of their maturing, accompanied by warm migliaccioli — delicious flatbreads made with brocciu. The tasting continues with a convivial dish prepared using produce from the farm, before finishing on a sweet note with a selection of local cheeses and the unmissable lemon fiadone.

For a relaxed break, the lunch menu offers a light, traditional ‘spuntinu’, whilst dinner invites you to take your time over a proper inn-style meal. Whatever the time of day, the spirit remains the same: celebrating authentic flavours and the bounty of the local countryside.
