L'Aghjalle

Meeting with the Aghjalle

In Santa Reparata di Balagna, L’Aghjalle brings together the Savelli family’s diverse areas of expertise in one place. As farmers, livestock breeders, restaurateurs and hosts, the family members balance their daily lives between tending the land, working in the kitchen and offering a warm welcome. It is a deeply rooted tradition where what grows and is reared just a few steps from the table naturally finds its way onto the plate.

Da a terra a u piattu, una storia di famiglia – From the earth to the plate, a family story

Founded in 1996 on a former traditional threshing floor, Auberge L’Aghjalle embodies the very essence of the Corsican countryside. Combining a working farm, a table d’hôtes and charming guest rooms, the Savelli family cultivates an authentic way of life here, from the land to the plate. It offers the chance to discover a story of passion, tradition and short supply chains in Lisula and the Balagne region.

Meeting

Générations Terroir: a family’s shared love of the land

We are a family of farmers and restaurateurs going back several generations. Based on our farm, we grow our own fruit and vegetables and rear our own livestock. At the inn, we serve seasonal Corsican cuisine, showcasing produce from our farm and local producers: cheeses, chestnut flour, honey… Everything is carefully selected to prioritise short supply chains and guarantee the very best quality. We work almost exclusively through short supply chains.

L’Aghjalle: the soul of a threshing floor turned into a haven for sharing

The Auberge was founded in 1996 by Carole and Jean Baptiste Savelli on the site of a former pagliaghju – a hayloft – near an aghja – a threshing floor – which now serves as a terrace. Their ambition was to combine working the land with local cuisine.

Whilst Jean Baptiste looks after the crops and livestock, Carole transforms the produce in the kitchen. Over time, the establishment has expanded to include six guest rooms, allowing visitors to extend their stay and immerse themselves fully in rural Corsican life.

Today, we continue this adventure as a family, remaining true to this philosophy.

Cuisine from the land to the plate

Our cuisine is based on unprocessed produce from our own farm and our localpartners. Our vegetables, meat and herbs come directly from our land, and we complement our produce with artisanal Corsican products.

The aim is simple: to offer authentic, flavourful cuisine, where every ingredient has a story and a traceable origin.

Between tradition and innovation: the future of L’Aghjalle

We are keen to preserve our family identity and remain a small, family-run business. However, we would like to expand our farming activities by planting citrus trees and an orchard, as well as setting up a chicken coop to provide fresh eggs.

We organise an annual event, an Easter picnic, which gives us the chance to share our world with our visitors.

Our priority is to maintain impeccable quality throughout the season and, if possible, to extend our opening period slightly.

A sustainable legacy for future generations

We hope to keep this farm going despite the climatic and economic challenges. Above all, we wish to pass on our love of the land to our children and grandchildren, leaving them a sustainable legacy. Working as a family and keeping our traditions alive remains our greatest source of pride.
